Let's cook Chicken Chap Today ----
Ingredients:
- Chicken: 500 grams (cut into pieces)
- Onions: 2 large (thinly sliced)
- Tomatoes: 2 medium (chopped)
- Ginger-garlic paste: 2 tablespoons
- Green chilies: 2-3 (slit)
- Turmeric powder: 1 teaspoon
- Red chili powder: 1 teaspoon
- Cumin powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Garam masala powder: 1 teaspoon
- Bay leaf: 1-2
- Cinnamon stick: 1-inch piece
- Cloves: 3-4
- Cardamom pods: 2-3
- Mustard oil: 3-4 tablespoons (for authentic flavor)
- Salt: to taste
- Fresh cilantro: a handful (chopped, for garnish)
- Water: 1.5 cups (or as needed)
Instructions:
Clean and cut the chicken into medium-sized pieces. Set it aside. In a large pan, heat mustard oil over medium heat. Add the whole spices (bay leaf, cinnamon, cloves, and cardamom) and sauté until they release a fragrant aroma. Add the sliced onions and sauté until golden brown. This will take about 7-8 minutes, so be patient for the perfect caramelization. Add ginger-garlic paste and sauté for 2 minutes until the raw smell disappears. Add the turmeric, red chili, cumin, and coriander powders. Stir well and cook the spices for a couple of minutes. Add the chopped tomatoes and cook until they soften. Then, add the chicken pieces and stir them until they are well coated with the spice mixture. Add about 1.5 cups of water (you can adjust the amount for desired consistency) and bring to a boil. Reduce the heat, cover, and let it simmer for 25-30 minutes, or until the chicken is tender and cooked through. Garnish with fresh cilantro leaves before serving. Serve hot with rice, naan, or paratha.
